Chef Soren Selin of Restaurant AOC, Copenhagen and His Two Michelin-Starred Cuisine

Joining Noma and Geranium last year in the two Michelin-star lineup is Restaurant AOC helmed by Chef Søren Selin. The restaurant with a subdued ambiance is uniquely housed in the cellar of a 17th century building, a short walk from the picturesque water front of Nyhaven. The minimalistic decor with whitewashed walls and vaulted ceilings are a perfect backdrop for chef Selin’s beautifully plated dishes, with wine pairings by co-owner Christian Aarø, the champion sommelier.
